VANILLA CUPCAKES


If you haven't made cupcakes have you even baked? These cupackes came out so delicious, they weren't dry and chewy, they were airy and moist, just the way they should be. If you decide to make them be sure to let us know!

 

This recipe makes about 24 - 27 standard size cupcakes.

Ingredients


  • 3 cups (315g) plain flour 

  • 1 & a 1/2 tsp baking powder

  • 1/4 tsp baking soda

  • 1/4 tsp salt

  • 3/4 cup (170g) unsalted butter, softened to room temperature

  • 300g granulated sugar

  • 3 large eggs, at room temperature (2 whole eggs and 1 egg white)

  • 2 & a 1/2 tsp pure vanilla extract

  • 300ml buttermilk

Steps:


  1. Preheat the oven to 350°F (177°C)

  2. Whisk the flour, baking powder, baking soda, and salt together. Set aside.

  3. Use a mixer (any version, handheld or not) beat the butter and sugar until creamed together. Ensure all sides are mixed in

  4. Add the eggs and the vanilla, continue beating on medium speed until combined.

  5. With the mixer on low speed, add the dry ingredients in two additions. Add half in and mix until incorporated then add in buttermilk and mix till smooth then add in the rest of the dry ingredients . Make sure not to overmix

  6. you can use 2 spoons to scoop and put into the cases but make sure it’s only half full.

  7. Bake for 15-20 minutes. ensure to keep an eye on it so the top of the cupcakes don’t burn.
