We've always wanted to try making tacos the way we always see online on 'Taco Tuesdays' and that couldn't be done without a good salsa and guac recipe!! We did some research to the best ways to make them and arrived at this, they were so so good and straight forward to follow. We used lamb because it's one of our favourite meats and we thought it would work well in this recipe and it definitely did. We hope you enjoy this recipe, we certainly did! Ingredients:
1 tsp Black pepper
1 tsp white pepper
1 tsp Chilli powder
1 tbsp Soy sauce
1 tsp Paprika
1/2 tsp Thyme
1/2 tsp oregano
1/2 tsp salt
1 tbsp All purpose seasoning
Parsley
butter
rosemary
3 garlic cloves
Guacamole:
3 ripe Avocados
1/4 cup finely minced onion
1 1/2 tablespoons fresh lime juice (or lemon juice)
1 large Plum or Roma tomato, deseeded and diced
1/4 cup cilantro leaves and tender stems, chopped
1/2 teaspoon ground cumin, optional
1/2 teaspoon salt, or more to taste
1/2 atarodo pepper or 1 chilli pepper
Salsa:
About six tomatoes finely chopped
1/2 medium onion (1 cup chopped)
1 or 2 atarodo pepper seeded and finely minced
1/2 cup cilantro chopped
2 Tbsp lime juice from 1 lime
1/2 tsp salt or to taste
1/8 tsp black pepper
Steps:
Season your lamb lightly with salt, black pepper, chilli powder, soy sauce, paprika, thyme, oregano, olive oil, all purpose seasoning then put aside or in the fridge for about 30 minutes.
While that is marinating you can work on your guacamole and salsa.
For the guacamole, cut up and mash your avocados until it’s the consistency you desire then add in the rest of the ingredients.
For the salsa, just do the same, cut up your tomatoes till its the amount you want then add in the rest of the ingredients and mix its everything is incorporated.
Once that’s done set those aside and get your pan for the lamb.
Place oil in the pan and wait till hot then add in your lamb. Make sure to fry for about 2-3 minutes per side. Add in your butter, garlic and rosemary and continuously pour the hot melted butter over your lamb till it’s tender and done to your liking.
Now transfer to a board so you can cut it up into chunks for your tacos. Make sure they’re not too big so you can have a nice full taco.
Now time to assemble the taco. We put the meat - > guac -> salsa but you’re fine to do it in any order you like! that’s all! xx
