We got this recipe from vice.com by Kwame Onwuachi. This recipe turned out amazing and full of flavour, definitely one of our favourites! However, our advice to you is that you make sure to marinate the chicken at least a day in advance to ensure the richness of the dish.
CHICKEN
Ingredients
1 cup|250 ml soy sauce
½ cup|12 grams thyme leaves
½ cup|225 ml Worcestershire sauce
¼ cup|75 grams tamarind paste
1 tablespoon ground allspice
1 tablespoon light brown sugar
1 ½ teaspoons kosher salt
1 teaspoon ground cinnamon
½ teaspoon ground cloves
4 garlic cloves, roughly chopped
3 fresh bay leaves
2 bunches scallions, roughly chopped
2 habanero or Scotch bonnet peppers, halved
1 (3-inch) piece ginger, peeled and roughly chopped
Jerk BBQ sauce
2 tablespoons vegetable oil
¼ cup minced ginger
10 garlic cloves, minced
3 yellow onions, roughly chopped
3 ½ cups|1.9 kg ketchup
1 ½ cups|300 grams dark brown sugar
1 ¼ cups|300 grams jerk paste
RICE AND PEAS
Ingredients
Kidney beans (canned or dried, but get canned because it’s easier cooked)
Half an onion
2 Garlic cloves or 1tsp of garlic puree
1 or 2 Atarodo or chilli
2 Bay leaf
400ml coconut milk
1/2 tsp White Pepper
1/2 tsp Black pepper
All purpose seasoning
Canned tomato or tomato paste
Knorr
Washed Basmati rice (or whichever you prefer)
Steps:
Put in your onions, garlic, chilli and bayleaf and sautée till the onions turn golden brown then put in your tomato and cook for a few minutes then add your seasoning, make sure to taste and if it’s good for you, add in the coconut milk and mix. Cook this for a few minutes (about 5 - 10). Make sure to taste, if it needs more seasoning you can add a little salt
Once the mix is done add in your washed rice and mix till the rice is covered then cover the pot with aluminium foil and put the lid back on. cook for about 20 minutes, ensure to keep on the rice and you’ll need to add the kidney beans
I added my beans when the rice was almost done as I had pre cooked them beforehand. So you can add in the beans when the rice is half way cooked, if you find it’s lacking some seasoning you can add in some knorr and cover that back and leave till the rice is fully cooked and that’s all.
