We got inspiration for this recipe from dinnerthendessert.com and mybigfathalalblog.com. Milk Cake has quickly become one of Hanaan's favourite desserts, it's very similar to tiramisu which you know is one of her favourite things ever. It's surprisingly easy to make and one of the best desserts you'll ever eat! The cake is light and moist and not soggy at all, it's also not too sweet but this is definitely a once in a while type of treat! Ingredients:
1 1/2 cups flour
1 teaspoon baking powder
1/4 teaspoon baking soda
1 tsp salt
5 large eggs , separated
1/2 cup unsalted butter
200g (1 cup) sugar
1 teaspoon vanilla extract
300 ml condensed milk
300 ml evaporated milk
250 ml full fat milk
50ml full fat milk
280 - 300ml double cream (whipped)
1/4 cup powdered sugar
1/4 teaspoon ground cinnamon
Steps:
Preheat oven to 350 degrees and spray your pan with baking spray or butter and flour it.
Sift together your flour, baking powder, baking soda, salt and set aside
In a large stand mixer or with a hand mixer, whip your 5 egg whites to stiff peaks form. Remove the egg whites to a large bowl
Now mix your butter and sugar on medium speed until light and fluffy, about 1-2 minutes.
Add in the egg yolks one at a time, then add in the vanilla and milk (50ml).
Add in the flour mixture until just barely combined, then fold into the egg white mixture gently.
Pour into the baking pan and bake for 30-35 minutes.
While the cake is baking whisk together the full fat milk (250ml), condensed milk and evaporated milk and set aside.
Remove from the oven, pierce all over with a fork and pour about 3/4 of the milk mixture over the cake, then cover and chill for at least 3-4 hours.
Just before you take it out of the fridge, Whip your double cream and sugar till it looks like whipped cream and set aside in the fridge so it doesn’t get warm.
Once you remove your cake from the fridge, top with whipped cream and sift ground cinnamon on top before serving.
