Biscoff Brownies

We got inspo from spicebangla and sallysbakingaddiction for these and they were quite good. We’re still trying to find ways to perfect our brownies but this is definitely a step in the right direction!

Ingredients:

  • 200g granulated sugar

  • 100g brown sugar

  • 130g butter

  • 125g plain flour

  • 100g dark chocolate (cut into chunks)

  • 100g milk chocolate (cut into chunks)

  • 85g cocoa powder

  • 3 eggs

  • 1 tsp vanilla

  • 1 tsp alt

  • a few table spoons of smooth Biscoff spread

Steps:

  1. First, grease tin with melted butter and line with parchment paper then preheat your oven at 350℉ (180℃). make sure to leave an overhang on the sides to lift the finished brownies out.

  2. Now take a little water in a saucepan and bring it to a simmer, place a glass bowl over it with your chocolate and butter and whisk till fully melted.

  3. Once that’s done take it off the heat and let it cool.

  4. In the meantime, in a separate bowl, pour in both sugars and add 1 egg at a time and mix properly using a hand whisk then add in the vanilla essence.

  5. When the mixture is a little add the cooled chocolate and butter mixture. The batter will have a thicker consistency.

  6. Finally, sift the flour, salt and the cocoa powder into the bowl and carefully fold them into the mixture using a spatula.

  7. Now pour the batter into the prepared baking pan then gently shake and tap the tin couple of times to spread the batter evenly.

  8. If you want biscoff in it, add it in dollops and use a fork to spread it into the mixture how you like or you can leave it in dollops (up to you!) but if you don’t want biscoff you can leave this step.

  9. Bake it in preheated oven for about 30 minutes and test with a toothpick when the time is up, if you have a few moist crumbs on the toothpick then perfect! you don’t want it too wet.

  10. When your brownie is done baking take it out of the oven and let it cool for at least 15 minutes before you cut it up.
