  • 1/3 (75g) cup unsalted butter, melted and slightly cooled

Biscuit:

  • 2 cups (250g) all-purpose flour (spoon & leveled)

  • 1/2 cup (100g) granulated sugar

  • 1 and 1/2 teaspoons baking powder

  • 1/2 cup (120ml) buttermilk, cold*

  • 1/4 teaspoon baking soda

  • 1/2 teaspoon salt

  • 1/2 cup (115g) unsalted butter, cold and cubed

Steps:

  1. Preheat oven to 204 degrees Celsius.

Apple filling:

  1. In a large bowl using a rubber spatula or wooden spoon, stir the apples, lemon juice, flour, cloves, nutmeg, cinnamon, sugar, and vanilla extract together until thoroughly combined.

  2. Set filling aside as the oven preheats; this time allows the apples to begin letting off their juice.

Biscuit topping:

  1. Whisk the flour, sugar, baking powder, baking soda, and salt together in a large bowl.

  2. Add the butter. Using a pastry cutter or two forks, cut the butter into the mixture until it resembles coarse meal (pea-sized bits).

  3. While slowly stirring, slowly drizzle in the buttermilk. Mix until evenly combined.

  4. Take handfuls of dough and gently flatten out. Place dough all over the top of the apple filling. It doesn’t need to be perfect some apple filling can be showing.

Crumble topping:

  1. In a medium bowl, combine the brown sugar, cinnamon, flour, and walnuts.

  2. Using a rubber spatula, stir in the butter.

  3. The crumble topping will be thick and crumbly. Sprinkle over apples.

Now place in oven and cook for twenty minutes. After that turn down the oven to 180 degrees Celsius and cook for a further 30 - 35 minutes.
